my favorite poppyseed chicken

This is one of my favorite meals for making ahead and popping in the oven for an easy last minute meal. It is also great to take over to a family that needs a meal after welcoming a baby or due to an illness. Enjoy!


Ingredients

3 cups of boneless, cooked chicken

3/4 cup of sour cream

1 can of cream of mushroom soup

1 cup of crushed crackers

1/4 cup of melted butter

1 tablespoon of poppy seeds


Instructions

1. Preheat oven to 350 degrees F. 2. Spray an 8 x 8 casserole dish with non-stick 3. Shred boneless chicken and toss into medium bowl. 4. Add sour cream, cream of chicken soup and poppy seeds to the chicken.Mix well. 5. Spread chicken mixture into prepared casserole dish. 6. In a small bowl combine crushed crackers and melted butter. Mix well. 7. Spread cracker mixture over chicken mixture. 8. Cook in oven for 25 minutes until top is golden and mixture is starting to bubble.
